Artificial intelligence is transforming the world of health and nutrition: from personalized meal planning and predictive analytics to community interventions and food safety systems.

This interactive workshop introduces AI concepts, tools, and applications tailored for dietitians, focusing on how professionals can leverage AI to enhance clinical counseling, optimize operations in diet centers, strengthen community programs, and ensure food quality and safety — all while staying ethical, evidence-based, and patient-centered.

Led by Dr. Lama Mattar, Associate Professor of Nutrition at LAU, this 4-hour workshop combines demonstrations, real-world examples, and guided activities to help participants harness the power of AI responsibly, ethically, and effectively in their daily practice.
